Come back any time. I live 'in your neck of the woods' so if you are looking for that place between 50 and 250 miles from home just ask. We may be able to point you in the right direction.
I understand how difficult it is with three children, one being an infant. Been there, done that. Camping can be a challenge in that situation but not impossible if both of you share the duties. I had to Man Up and help DW more than ever.
When we were in that mode, two daughters and infant son, we did the beach thing mostly at Galveston SP, San Louis Pass KOA (now Brazoria Co. park) and Freeport beach (now Quintana Beach park). We also went to Palmetto SP so the girls could play in the river and it was a quick tow down I10. We didn't wander too far off until the baby was a little older. There are several hassle free places close by where the girls can have fun.
On Edit: Thinking more on this, pack a tent. The girls loved sleeping in the tent and it made setting up and tearing down indoor sleeping quarters every night unnecessary. We still have there Disney tent stored away awaiting GKs.
Simple meals. They don't care what they eat so make it easy on yourself. Sandwiches and chips make it easy. Can soups and chili frito pies were a gourmet meal back then. Have grapes, sliced apples, oranges, bananas around so they don't dehydrate.
Once our kids got older we would sometimes camp not too far from San Marcos, such as Palmetto, Martindale or New Braunfels so the girls could make a trip to the Mother Ship Outlet Mall (Tanger) and my son and I stayed and played at the river. Everyone was happy.
