If there's no way in and nothing that smells like food inside to encourage them to make their own entrance, they will leave it alone.
Having the roof up gives them all sorts of easy access through the canvas. Leave it down.
Mine spends the winter in a pole barn too, top down, on the jacks and some sawhorses, or the cart I made for it that doesn't work very well. Cleaned, sanitized, and all food removed. So far so good.
It probably doesn't hurt that I firebomb the barn with Tomcat pellets. Only problem is next door has two cats now that run loose...
