First, unless you pumped air down the drain. You didn't purge the tanks.
After draining the tanks. You don't have any thing in there. however. I would suggest closing the Black tank, put your chemicals in, and add 5 gallons to avoid the DRY tank smell. Also close the low point drains, and the grey tank, but you don't have to put any water in it.
No 5 gal won't hurt the black tank. There will be plenty of room for the water to expand as it freezes.
