Elizabethtown, KY to Newburgh, NY and Back

Hi all! I posted a similar thread recently and am just looking for some more feedback on our upcoming trip. Our itinerary has changed a bit; we are no longer stopping in Gettysburg on our way home due to time constraints and not wanting to rush on the rest of our trip. We are allowing 3 days of traveling each direction.
Here's what we are thinking we will do:

On our way to NY, we plan to go east through Kentucky on I-64, then I-79 to I-68, and then Either PA 220 to I-99/I-80/81/84 -OR- take I-68 to I-70/I-81/I-78/287/I-87. I'm still need to do a little research on that route and make sure there's nothing difficult we want to avoid. (I got lots of feedback from my previous thread asking about grades so I need to go back and read that again, as well as the mountain directory.)

We want to see different scenery each direction so will be heading home from Newburgh, NY, across Pennsylvania on I-84 & I-80. We'll stay the night around the PA/OH state line then head out on I-76/I-71 to Columbus and then on to Cincinnati & Louisville. We're planning to stay a night near Louisville as well.

My question is, are there any places along those routes that you would recommend for taking short breaks to walk around and stretch our legs? I know there are rest areas, and those will be our go-tos if we don't find anything else of interest that we know will be easy to get in and out of with the TT. I thought if there were some neat local sights that you all knew about, that would be great. Maybe craft/farmer's markets or quirky museums or something like that...just a fun place to stop and experience the local area for a little bit without taking us too far off the interstate. We want to make the journey to and from our destination enjoyable too!

two thoughts I have this is one>>in Wilkes-Barre,Pa...off f 81 before I-80 you have the Mohegan Sun Casino at Poccono Downs racetrack...there are a few resuarants and RV parking for the night..dry camping but none the less a few RV's there
2nd>>> the first rest area on I-80...Ohio Tpke has a dedicated RV section with elect...50/30 amps and water and dump station...for $20.00...we use it quite often...saves getting off the hwy...Chcuk

The last time I was up that way we took route 17 across NY to I 86 and stopped in Corning , NY . Went to the museum of glass at Corning INC... heck of a museum ! Then about 15 miles from Corning we went to Watkins Glenn, NY. There is a great State park and Gorge there plus the Nascar track. Then went back to I 86 and on to Cleveland, Ohio and down I 71 on our way back to the Land of Enchantment.
