What time of year are you planning on? Most of the replies have focused on the usual tourist "to-do's", but you must see the Green Mountains, Lake Champlain and the Islands, and the rugged Northeast Kingdom. A great ride is to travel all the way from MA to Canada on VT RT. 100 through the middle of the state. either from the north or south would be fine, and since it is a meandering 2 lane highway you can wander off at any point. There are lots of posts on RVNet on the horrors of bugs, but I have been in VT, NH, and ME for well over half a century and have never been terribly bothered...
Another thought - while Rt 100 takes you right thorough the heart of ski country , the mountains, and right by Bed & Jerry's (IMHO some what over-rated) another great trip is up (or down) Rt 7 on the western side of the State. Start in Bennington, up through historic Manchester, Middlebury, Shelburne (Shelburne Museum, a must see) Burlington and St. Albans. Rt 7 skirts Lake Champlain, with vistas of The Adirondacks the Green Mountains. Lots of CGs along the way.
