Recommendations could depend on which way you plan to go, once out of Kansas. Having driven between Colorado and Memphis many times on my way to Alabama and family, there's a variety of ways to go depending on your timetable.
Are you planning to take I-70 all the way east to St Louis then drop down I-55 from St Louis to Memphis? If you're going this route, I would suggest crossing the Mississippi on I-155 to Dyersburg TN and bypassing Memphis all together, unless you have a compelling reason to go to Memphis.
Are you planning to take I-70 to Salina KS, then drop down I-135 to Wichita and on into Oklahoma, then going to Tulsa and picking up I-40 in eastern Oklahoma?
Are you planning on taking some alternative route?
Recommendations also depend on how much time you have and how far you want to drive each day. There's a good place to stop in Oakley KS (High Plains Camping) as well as the KOA in Salina as noted previously. There's also a KOA and The Woodlands RV Park in Wellington KS that were both nice places to stay when I've passed through.
I've also stayed in the Sallisaw/Fort Smith West KOA in Oklahoma, it was convenient and good for an overnight stop. If you have more time, there's other nice places in the Sallisaw area, just depends again on your timetable.
I'm sure others can make additional recommendations, but it depends on whether you're looking to take your time or have a schedule to keep.
