Yeah, quesadillas!!! My DH makes some at home using leftover bar b que pulled pork, pepper jack cheese, onions, maybe a little more sauce if needed.
There are all kinds of things with substitutions. This reminds me of the "Killer Omelets" we used to eat at FS Gabligen, FRG when we were stationed there from 1974-78. They would lock up all the meat for the next day, so the midz cook would go scrounging in the refrigerator and pantry to see what he could add to the omelets for a different flavor and stretch the food for the crowd. I was on a fb group when we were all reminiscing about the different foods put between the scrambled eggs.
