It's easy to re-set the leveling system. You will need to first manually level your rig and then go through the reset process. This tells the 6-point brain what the new 'level' is. I used a Bubble Level on the floor to find that. Check several places to make sure.
As was stated, only add fluid with all slides in and all jacks (including the front ones) retracted. There is a full mark on the reservoir.
The problem I have is that I can only partially open the compartment door when I am hooked up, so I ended up making a mark on the reservoir corresponding to 'full' when the rig is all leveled up. Yes, I know the legs can be extended to different lengths at different CGs, but I figure the mark is good enough to give me advance warning if there is a problem.
I also had the popping noises, mostly on colder nights. I called Lippert and they told me to get a quart of a specific Caterpiller hydraulic fluid and add it (after removing a quart of the original fluid). This solved the problem. The Cat stuff was not cheap.
