How much can the landing gears lift?

I think you would risk breaking a weld on the cross members that hold the pinbox.

My 5ifth wheel manual states that each front jack is rated for 3500# each leg.

The book also recommends solid wheel chocking to prevent axial damage.

In the safety notes for the jacks the book says:
**Under no circumstance should the front electric jacks be used to lift trailer while connected to tow vehicle.
Serious injury and damage to equipment may occur.

I hope you were kidding in asking this question.

I can certainly tell when my landing gear starts to lift my truck, simply from the sound of the motor starting to strain. When I hear that, I reverse back for a couple seconds before I unhitch. To the OP, I agree that, unless your driveway has a =huge= slope, you've likely got something else wrong that's preventing the fridge from cooling than being out of level. Run your gear down a ways, drop the extensions, chock the wheels, unhook and get yourself level to be sure.

My manual is SO generic as to be almost useless :)

The manuals that usually come with RV's can be somewhat helpful.
There are a number of safety tips noted all thru these handy little guides.

You are likely to shear a roll pin that protects the motor from overload/overtravel.

This happened to me. DW forgot to pull the latch & tried raising the fiver. It sheared the pin as mentioned. Had to remove everything in the basement to access the motor. If yours is set up like a lot of keystone products expect that too happen or as mentioned blow a fuse
