I just checked my Holiday Rambler 5th wheel manual and it says when changing a flat tire, you should put the jack under the axle several inches in from the u bolts(towards the center of the axle). Then put a jack stand with a block of wood on it under the main frame rail to provide additional safety. In both cases they say to use a large piece of plywood under the jack and jack stand. And yes chock the other tires.
