Yes, use a teflon plate on your hitch, just be sure to get the right thickness for your hitch. The thicker ones won't work on some hitches.
6" is the rule of thumb for bed rail clearance, though more is better, IMO, if you can keep your FW level. I have just over 8", tow just a hair nose-high, and am not inclined to change it as we do some boondocking in areas where I need pretty much all of that space.
