I tend to agree that when parked at home, the fridge is just enough out of level to affect the circulation of the coolant. When you go down the road, it shakes the coolant enough to get it circulating. We had a similar problem with our previous fifth wheel. When it was parked by our shed the fridge would work but it would not work in the driveway. Our driveway is not sloped much, but it was enough to keep it from working.
To test this idea, you might put the fridge on gas, take the trailer for a short drive and then see if it stays cooling when you park back in the drive. I know it would be an annoyance to do this, but if that makes the fridge work, you know it is the slope of your driveway.
