We full time in our voltage but stay mostly on paved roads. Ours is one of the few that has a 14 foot garage and is the legal max of 102 wide. I have seen mentioned a few new units with larger garages but have not seen any of them. The RV group is going to in general have more ground clearance than the race car group will, most of them are built as low as possible to enhance ease of loading.
Make sure that whatever you choose will not only have room for your stuff but also be rated to handle the weight. The wet weight of these units can get very close to max weight not leaving much capacity for the toys and support equipment.
The garage areas are usually not as well insulated as the rest of the unit, especially the floor since that is where the fuel tanks go. Looking at your desires I would guess that many of the existing offerings can be made to work for you and if you like the floor plan I would highly recommend the TH that is in my sig.
