I would always want at least two A/C units unless it was a small class-B. Even if one was enough, it's alway good to have a back-up A/C unit.
We happen to have four 13,500 btu roof units. Two are mostly fine 90% of the time. I will run three every now and then in the hottest part of the day, running four is never really needed. It's just good to have the extra 'just in case'.
Our ducts are CAD designed without any hard bends. The 13,500 btu units will blow your hat off if you walk under a vent and they are relatively quiet! LOL!
Safe travels!
