Are you traveling/stuck in Pahrump or living there? Those tires, as you seem to know, are less and less available.
What chassis are they on? Do you know if it can accept size 8.75? They seem to be much more common than 8.00.
Sometimes a local, small community dealer can find 16.5 tires as they're serving rural areas that are running older vehicles.
Ford E350's could swap from 16.5 wheels to 16 from 1984 up. I don't know when they went with 16's as original. Just thinking it might be a good time to change wheels and all, get to currently used tires, probably 225/75R16E. Might even be able to find a decent used set, mounted.
