I have a 22' class c that is currently winterized. My question is can I leave cold Utah in January with water in fresh water tank with hot water tank bypassed,(running cab heat) and drive to warm Ariz...

Depends on how fast you expect to drive. I would not put fresh water in until I got ready to de-winterize. Carry a few gallon bottles of water inside. What is it, about two days travel?? If Fresh water tank is inside as it is on many Cs, If you can stay in it, water will be OK.
