Your freshwater is probably not at risk - but if you use it to flush the toilet, your lower black/gray tank valves could freeze. When we'd leave Michigan in January, we'd flush the toilet with a splash of antifreeze; and would drink bottled water. If any water went down the sink drain, we'd follow it with a splash of antifreeze. Obviously we'd stay in campgrounds and use their showers and bathrooms as much as possible. Never had any problems.
Also - I cut Reflectix insulation to fit all the windows - made a HUGE difference in how warm the RV stayed at night. Usually we'd use an electric heater for warmth, and with the Reflectix and some foam stuffed in the overhead vents, the heater did most of the work.
