Make sure you cook it well done; trichinosis is a danger. No, if it is an old boar, you probably can not eat it, even as sausage. I grew up on a farm and we tried to make sausage out of an old boar. It tasted horrible, the meat even stank. We threw it away, and we were pretty hard up; ate beans most of the time.

A great way to roast a whole pig, be it wild or farm is a concrete block pit. We do one every year for the 4th of July party. Follow these guys here and you cant be wrong. It come out wonderful every time.

If you are talking smaller portions like a but or ribs or ham, treat it just like you do all other pork.

The flavor will depend on what he's been eating, here in GA we catch 'em, pen 'em and feed 'em out before slaughter to flavorize them.

It's pork, the only real difference is in what is has been feeding on. It will likely have a unique flavor from its main food source. It will be leaner than what you're used to.

Hopefully your friend will bring back some first hand information. What an animal eats can make a world of difference in regards to whether it becomes sausages or roasts.

I have heard that feral pigs in Florida are actually pretty darn good, but those pigs have lots to eat in Florida. Don't know what the situation in Texas is. You might just end up with a freezer full of sausage. But if he is on an organized hunt, the people running that hunt will know best.

I had a neighbor that would butcher them. He said he put them in coolers for several days with ice and salt I believe it was to get rid of the wild taste. He would drain it and add more ice. I never tasted it so don't have a clue if it helped.

Could you even eat a boar? An old domestic one tastes very strong.

If it's a gilt or a sow just cook it like any other pork.

If it is boar meat, smoke it or use it for sausage.

My friends that hunt pigs have all their meat turned into sausage if that tells you anything.
