Cooks Grand Reserve sparkling wine is perfect for this method - only about $5 per bottle.
Dice one medium onion and sautee in olive oil until translucent. After pouring a couple of glasses of sparkling wine for you and your sweetie, pour the remainder into the pan with the onions, and add some fresh dill (absolute quantity does not matter). Then add slices of salmon filet, and cook to your desired done-ness.
