Cooking potatoes in campfire

Oh, no, you haven't tasted anything until you get a big old sweet onion, cut a core out, stuff it was a bouillon cube, and some butter and wrap it in foil and cook. Remove the second you smell onion. Delicious. (You could peel it or not))

Lots of times we will chop raw potatoes up in 'bout 3/4" dice. Through those in a 12"X12" foil with a little salt, pepper, seasoning and olive oil. Seal all the edges and toss it on the edge of the fire. Cooks up in about 20 minutes. Very easy, very fast, very yummy

Slice potatoes almost in half - put butter and onion slices ( vadalia is preferred) inside - close back up and wrap with bacon slices - wrap in foil. Yum Yum

I cheat, I put mine in the microwave for a few minutes before I wrap and put in among the coals. And pierce the potato before putting in the microwave.

Before wrapping in Al foil I coat them with olive oil and salt. The olive oil prevents the skins from turning black from the coals.

Love all the great ideas expanding on the simple baked potato. Sounds so good that I can't wait to try them. Maybe, we'll have a campfire in our backyard soon before we go camping. Oh, forgot to say, we use regular potatoes, not the baking kind.

Have any of you tried adding cabbage to the packets? Really good!

We like to make what are called Potato Bombs! Use an apple corer and punch a hole thru the center (long ways) remove the core and break in half, Now fill the center with what ever you want!, Butter,Garlic,Ham,Cheese,peas,corn Etc. Wrap 'em in foil and lay them on the coals. Oh yeah, the core,, Just push them back in the holes to keep the fillings in! We usually buy a half dozen large russets and do this,, Last time camping I smoked a Tri Tip, chunked up the tip and added cheese and finely chopped jalapeno pepper to it!! YUM!!!

we also go one step further and make what we (and all my family) affectionately refer to as campfire dinners. roll out a long strip of foil. add corn (frozen works best but can is ok too) sliced carrots, sliced potatoes, chopped onion, and a hamburger patty (or 2 if your fat like me)and salt and pepper. Wrap tightly with the foil doing your best to seal it off to hold in any steam. then wrap in a layer of wet newspaper then again in foil. cook on the edge of the fire pit, a Y stick, a grate or rate on the coals if your careful for 45 min to an hour. campting tradition we all look forward too. (can also make at home for an easy ready to go supper on a first night. just be careful not to let the flames get them too bad
