Equal parts butter and flour (about a teaspoon of each will serve 2 people nicely) "smushed" together in your hand makes a buerre manie. Add to a 1/2 cup of wine that has been reduced in half over medium to high heat and you are good to go for 2 people. Sometimes I add freeze dried chopped shallots or scallions and dried herbs to the wine to enrich. To serve 4 people jump up to 1 tablespoon flour and butter.
Last night I made a 20 minute pantry dinner of clams over linguine minus the linguine; used pasta shells instead cause it holds the sauce so nicely and it was on hand.
3 garlic minced cloves (we like garlic but you can use less)
1 can of chopped clams
1 can of minced clams
buerre manie
parsley in a tube; used about a tsp; you can sub fresh or dried
1/4 cup white wine
Place wine and chopped garlic in uncovered pan over med high heat; reduce liquid in half. Add parsley, 2 cans of clams(include can liquid), buerre manie and parsley. Simmer for 8-10 minutes, stirring occasionally. Add cooked shells and serve adding a splash of a nice EEVO. If you have one, a chopped scallion is a nice topping. Also since I'm not a Southern Italian I've no prob with adding grated cheese;). If I had any leftover pesto sauce I'd have added that instead of the parsley and EVOO.
