Easy Microwave Lemon Curd

A friend of ours gave us a jar many moons ago and now we can't get enough of the stuff because it seems healthy at least while tasting good. We'll use it for layering between a lemon pound slices or just eat it on toast.
Found an online recipe that's easier to make than the original recipe.
