Easy Peasy Bacon Dishes for Camping

Bacon Wrapped Corn

Ears of corn

Wrap a strip of bacon around each ear of corn, then wrap in heavy duty aluminum foil and place in the fire. You can also place them on a grill without the foil.

Rotate every 3-5 minutes to make sure the corn and bacon are cooking evenly. Remove when all sides of the bacon are thoroughly browned (about 10-15 minutes).
  • This one is a favorite with the children.

    Bacon Burrito

    Fry up the bacon.**

    Put in a flour tortilla.

    Top with your favorite toppings. Some suggestions below.

    • Mexican crema or Cheese
    • Onion
    • Peppers
    • Chopped eggs (scrambled or hardboiled)
    • Any toppings or bits leftover from the last meal.


    **Next level: wrap the bacon around a hotdog, kielbasa or smoked sausage and grill.
  • Cowboy Pork and Beans Casserole

    Ingredients
    1 lb bacon diced
    1 lb ground pork
    1 cup white onion chopped
    1 28 oz can of molasses pork & beans
    1 packed refrigerated biscuit dough (or make your own from scratch and freeze until needed).

    Instructions

    In a dutch oven fry the bacon, ground pork and onion until browned.
    Stir in the pork and beans.
    Place the biscuits in a single layer on top of the beans.
    Cover and simmer for 12-15 minutes or until the biscuits are done.

  • The semi precooked bacon available in the stores makes wrapping any food so easy. IMO, the best and easiest way to get crisp bacon on cooked food. Bacon wrapped meat balls and finished like burnt ends are the bomb as an appetizer or happy hour item.
