Fried Taters II

So tonight I made fried taters again but this time I used Olive Oil instead of bacon grease. I'm sure it is healthier for me this way. But the bacon grease really does win out over Olive Oil. Sorry Olive Oil lovers. :)

  • Add a couple tablespoons of butter to the bacon grease! Awesome....
  • None of those fancy schmancy 'healthy' (aaargh) substitutes here. Bacon grease it is. Yum!!!
  • Try grapeseed oil. It is good for you (well, as good as any oil is) and it doesn't have a taste.

    Double ditto; with another vote for healthy coconut oil for this task with the plus that coconut oil is good for high temp frying.

    Bacon grease has plenty of flavor in small amounts. Add a tsp of bacon grease to the neutral flavor of coconut oil and you get flavor with a healthy fat.
  • What Robsouth said. Olive oil does not do well when subjected to high temperatures. You can get away with a little gentle sautéing, but french frying is way beyond olive oil.
