Lost a cooking bet

Ok, my Saints lost last night, and as a result I have to cook a Texas-themed dish for my wife (she's a rabid Cowboys fan). Any recipe suggestions? Thanks!
  • Texas Fireballs from this thread.

Kent Rollins does a number of Texas style dishes on Youtube.

Just about any Tex-Mex recipe will do: tacos are the easiest. I like Chiles Relleños and enchiladas (red, green and white versions).

Here's an easy recipe from The Homesick Texan for Cheese Enchiladas.
  • glad to see the recipe for cheese enchiladas hasn't changed much since my gramma and mama taught me to make it, only we all use/used bacon grease for the fat.
and once in awhile, we made some homemade chili con carne to pour over it all.

brisket is always good, with a good rub and slow cooking.

when my dad still hunted, we used to make a really good venison chili that was always better the next day.
