glad to see the recipe for cheese enchiladas hasn't changed much since my gramma and mama taught me to make it, only we all use/used bacon grease for the fat.
and once in awhile, we made some homemade chili con carne to pour over it all.
brisket is always good, with a good rub and slow cooking.
when my dad still hunted, we used to make a really good venison chili that was always better the next day.
