- No, it's not venison. The casing is a venison summer sausage casing. This is 60% beef, 40% pork. Not a "dried" type salami. It's a cooked Salami like your mom would have used to make you a salami sandwich in grade school........only better cause it's homemade.
- Looks delicious. I loved the salami sandwiches my Mom made me as a kid. Good deli salami and mustard on soft white bread. As I got older I enjoyed the same, but with a slice of onion too. Never had homemade salami though. Where are you camping over New Years?? :D

on this forum without sending 'all' of us a sample! - Sliced up.....came out real good. Strangely enough, take a 1/2" slice of this, brown it just a bit, put an egg on it and plop it on a dinner role for a breakfast slider..........pretty yummy

These are synthetic casings from Southern Indiana Butcher Supply.
