Savory homemade chili using a pressure cooker
We use a Cuisinart electric pressure cooker when on the road and at home. The advantage is you can fill the pot at the beginning of the day, set it, and forget it (the cooker will automatically keep your meal warm). When you return to your rig, you'll be greeted by the most wonderful fragrances!
This chili uses dried chiles, bacon, pork loin, black beans, canned tomatoes (whole), and spices.
A variety of chiles - use anything you like. We used 2 each dried chiles: ancho, chipotle, puya, guajillo, arbol.
De-stem, remove the seeds, and toast in a hot pan until you can smell their fragrance.
Wash 1 pound of black beans, cube 1 pound of pork loin, dice 4 slices of bacon and place everything in the pot and cover with water. Set the pressure cooker for 60 minutes, and go enjoy your day!
In a large pot (the one on the left in this image), hand crush a large can of whole tomatoes. Remove the chiles to another pot (the small one on the right) and add all the cooking liquid from the pressure cooker (to the small pot).
Add the meats and beans in the pressure cooker to the pot containing the tomatoes. Add spices to the small pot containing the chiles and cooking liquid - we like salt, cumin, smoked paprika, and thyme. We used a stick blender to blend the chile/cooking liquid/spices until smooth and thick (you don't need any kind of thickener). Of course, you can use any kind of blender. Add the contents of this pot to the big pot and heat until you like the temperature.
Serve with grated cheese, sour cream, or anything you desire.
