Smoked Salsa Day

It's Smoked Salsa Day today. We're having a get-together on Saturday and I want to give it a few days to integrate and mellow.





RECIPE:

Ingredients:

- 1 red onion
- 10 Roma Tomatoes
- 10 large jalapeƱos
- 1 yellow bell pepper
- 1 orange bell pepper
- 4 large poblanos
- 10 cloves garlic
- 1 large sweet onion
- 1-2 bunch cilantro
- 2 limes

Directions:

1. Cut the tomatoes, peppers, and red onions into large pieces and peel the garlic.
2. Smoke everything at 225 for two hours
3. Dice the sweet onion and chop the cilantro
4. Run all the smoked ingredients through the food processor
5. Stir in the chopped onions, cilantro, and lime juice
6. Let it chill overnight
7. Taste the result and see if it's too hot or bland. Add more tomatoes if it's too spicy or more peppers if it's too weak.
  • It came out a little hot, maybe even too hot for our guests. I'll sample it tomorrow morning with my breakfast eggs and see if it needs to be diluted with more tomatoes.

  • And it might be different with food. We were just spooning it in raw-dog and it was pretty warm. Salty chips might be different.

    Ditto for something fatty to go with it. Tomorrow morning I'll get up early and throw a couple pork butts on the smoker for pulled pork tacos on Saturday.

    I have to laugh at myself. Every time I read this my brain sees it as "spooned in raw dog food" and I have to read it again.

    But I will say it looks good and makes me crave some chips.
