Today was figure out what to do with a bunch of leftovers. This turned out quite tasty.
Rice noodles, enough for 3-4 people
1/4 head green cabbage
1 cooked chicken breast, cut into bite sized pieces
¼ cup sliced black olives, drained
1 can hominy, drained
2 Roma tomatoes, diced
1 tablespoon dried chives
1 tablespoon dried parsley
1 tablespoon dried mint
2-3 tablespoons fish sauce
Soy-Ginger dry seasoning
Boil rice noodles 3 minutes, then drain. Using kitchen shears, cut into about 3" pieces (just eyeball it and cut through the noodle mass). Pour into a large bowl.
Slice the cabbage thinly, in bite sizes. Add to the bowl and quickly mix cabbage and noodles with your hand.
Add remaining measured ingredients and mix well. Add Soy-Ginger dry seasoning (or whatever you have in your own spice rack) to taste and mix well.
Serves three hungry adults or four not quite that hungry adults.
