Chicken Pot Pie - camp style

Cook 2 large chicken breasts, shred or cut in small pieces
1 can cream of chicken soup
1 can cream of mushroom soup
29 oz can mixed vegetables - drain some liquid off

Mix above ingredients together and put in a sprayed aluminum pan (about 9x13 size with tall sides), Cover with foil, and put in 350 degree grill for 15 minutes. Remove from heat. Cut 2 rolls of Jumbo biscuits into 1/4ths and put on top of chicken mixture. Leave foil off and return to grill for 20-30 minutes to brown biscuits and filling is bubbling at edges.
  • That sounds really good especially with some cold weather finally coming in.
  • Hey Hokey Pokey,

We roasted a chicken on Monday and of course only ate about half of it. So, I cut up the remainder today and mixed by your recipe. In the DO now. The mix tasted great cold. Should be a great meal.

    Thanks for the recipe.

    Chuck

PS - What if the Hokey Pokey IS what it's all about?

Haha, Chuck. I give recipe credit to our daughter, the “inventive cook” of the family.
  • Made this a couple nights ago-used some left over chicken with rice, can of creamed chicken soup with only 1/2 cup of milk, 1/2 bag of frozen mixed vegetables, poured into a frozen pie crust, then put crescent rolls over top, drizzled a little butter & parmesan cheese on top and baked(380) for about 15 min.
REALLY good!! May cook this for potlucks-so easy! Tip: cooked the veggies with the soup until hot, then poured into pie crust. Gary
