Turkey dry rub?

Does anyone out there have a good recipe for a good dry rub?

I used to have one but had to reset the computer back to factory default and lost mine.

DW does not like spice but likes a zesty recipe. All I can remember is that it had paprika and about a tbsp of oil.

I want to use it for an outdoor turkey cooker. Not a deep fryer, but a cooker( The Charbroil-Big Easy).
  • I daresay you could recreate the recipe if you both closed your eyes and remember the taste together; then jot down the flavors and experiment. My thinking is that with poultry it would have sage and/or rosemary along with salt, pepper, and paprika.
  • What I've used in a Weber charcoal grill is just oil on the turkey, then course ground salt and pepper. But, I do use hickory chips on the coals. I find I don't need more seasoning that this.

    One other thought is to google Mike Mills 'Magic Dust' recipe. This recipe is from a BBQ restaurant in Illinois and is pretty good. But, I prefer simple and the fewer the ingredients the better.
  • Here's one I've used a few times w/ success. It originates from Steve Raichlen.

    Yield: Makes about 1 cup

    1/4 cup coarse salt (kosher or sea)
    3 tablespoons sweet paprika
    2 tablespoons garlic powder
    2 tablespoons onion powder
    2 tablespoons dried thyme (preferably ground)
    2 tablespoons dried oregano
    1 tablespoon freshly ground black pepper
    1 tablespoon freshly ground white pepper
    2 teaspoons ground dried sage leaves
    2 teaspoons cayenne pepper


    I've been known to delete some of the seasonings if I didn't have em on hand but always keep the thyme,garlic, sage and least some form of paprika and at least one style of pepper. Oh and once I added either grated dried orange or lemon rind.

    A simple rub that's easy to make is Lawry;s Seasoning Salt with brown sugar to taste. Lawrys is a fairly complex seasoning when you think about it, garlic, paprika, salt, onion, and more.
