Vastrami.

Opened my last package of venison pastrami a few weeks ago.
So it was time to make some more. 18lbs brined, rubbed, smoked, and vac sealed. Oh soooo good.

    It's a Cabela's sealer. Had it for 3 yrs and have used it a lot.
    Not sure who makes it for them.

    I think I have a lemon from Cabela's - one of the Gamesaver series that has a hard time sealing.
    Must say that FoodSaver (who makes it) has been very good about it though. First I bought new gaskets and when that didn't resolve the problem they allowed me to mail the appliance back and sent me a new one.
    Still, it interrupted my bulk cooking cycle sooooooo I'll prolly buy a different manufacturer's version when needed in the future.
