There are a few different factory doghouse covers from Ford over the years, as Jim alludes to, and as I understand it they are interchangeable. You can remove yours by manipulating the latch tab thingy at the bottom and then lifting it off.
Anyhow, some (I would say all) of the other designs appear much more functional than the silly one that you (and unfortunately I) currently have, and you can find used ones on ebay or presumably in junkyards for quite moderate prices. Bear in mind that Ford has sold a whole bunch of E-series vans over these years, so there's no need to look specifically for RV parts.
Of course, if you want wood or leather or something more luxurious than gray plastic, you'll have to look for aftermarket stuff and/or see about fabricating something yourself.
