Building a custom aluminum teardrop painted it with self etching rattle can and was wondering if I could put epoxy
paint over it

Epoxy over Etch prime is fine....just don't sand through the epoxy to bare and try to spot in with the Etch Prime,it will lift the edge of the Epoxy.

The time to ask that question was before you started painting- choosing compatible finishes is key to success.

That having been said:

Whatever "self etching rattlecan" (primer?) you've laid down should say right on the label what topcoats will adhere to it. Also, whatever epoxy you're looking at will say what undercoats it will adhere to.
