I often walk around and pick up any trash near my rig and also go in to buy stuff. Check on the states that you will pass through as some rest areas do allow you to over night but I wouldn't put the tip in another lane. Be sure you are overhanging lawn or end of a row obviously.

This. Obviously, you don't want your bed sticking out where some half blind fool can run into it!
By definition, a "rest area" is a place to stop and get some REST for SAFETY reasons! In many states, when it is posted "NO CAMPING" the intent was to stop people from setting up tents on the lawn. Some areas restrict parking to 8 hours. When commercial drivers run out of time, they MUST stop for the required period. That, too, is what rest areas are for.
