Of course, raw chicken also has a salmonella risk, which is why humans have to cook it before eating it. Most of the Salmonella risk is to the humans, rather than the dogs. Sometimes, a dog will get it, especially if it has other, underlying health issues. However, a dog's digestive tract is so short, salmonella usually doesn't have enough time to develop in order to cause a problem.
I'd recommend washing your hands well after handling any product, animal or human, that has meat in it.
