Norcold N821 inconstant cooling

Hello all, 

I've been reading threads for a week now and can't find a similar problem as mine. 

We have a 2000 Ford e350 Royal Expedition, with a Norcold n821 fridge. Recently, my husband unplugged the unit to thaw the freezer and on startup it took a ridiculous amount of time to chill on a/c again, but it eventually did after about 2 weeks & me constantly increasing the temperature on the optical panel. 7 seemed to keep things frozen. We headed out for 10 days off grid, and about day 4 the fridge stopped cooling. I was able to keep it safely around 0c as long I would restart the fridge whenever I'd see it dip into the 1c area. Once at home, I started the troubleshooting, and was able to finally, randomly get it back to 0c with no thermistor, and the outer panel off so the back of the fridge is open to the air.

Suddenly, this morning, the fridge is 18c again. 

There's no smells, nor any sign of yellow dust or leaking. The boiler gets hot, as do the coils. There are always 2 fault codes: when it's in Backup Mode and there's no thermistor, or when it's not able to power on a/c because I've manually shut it down. I always clear the codes and start again. There's no fan in the back of the fridge compartment, never has been. It's my understanding that an alarm should sound if the unit overheats? Or drops to a dangerous temperature, but no alarm has ever come on. 

The problem exists on LP same as A/C. I've checked the flame & it's solid & blue. 

I'm at the point where I think we need a control board replacement, but the 2 thermistors we have on hand both test as though they're working (checked with amp/voltage meter).

I'm wondering if we're missing any other troubleshooting ideas, before we hand over $350 for a board, or worse, $1500 for a cooling unit (which does seem to work, just intermittently)

I feel like I've troubleshot myself into a corner and could absolutely use some guidance, before I start spending the big bux, please!
