I have a 2015 Thor Hurricane 32N with two Coleman/Mach 13,500 BTU a/c units which are controlled by separate thermostats. Both a/c units are working correctly but the thermostat doesn't cut one unit ...

Turn off the one that you think is working properly and see what the other one does.
If it works then consider running them both from the same thermostat if it concerns you. The down side of that is over kill on the BTU count and frequent on/off cycles.
