There's and article in the most recent Trailer Life about re-doing the interior of a TT by a company that does it as a specialty. They are shown putting down what is described as Congoleum Tile that they put down on the floor after cutting and removing the vinyl flooring and carpet that was originally there.
This they glued down with a special glue and used a flexible vinyl based grouting.

Personally I would shy away from anything that "floats". it's bound to have problems over the years.
I am planning this same upgrade to mine sometime this year.
