Has anyone modified their bumper mount, the one intended to be used with the grill provided, to instead hold their portable Weber?

I don't have a very good pic of my rear bumper on my TT, the bumper holds my sewer hose and if you look all the way to the bottom right on the white bumper ?? see that black metal piece, it's a hitch receptacle, I can put a bike rack in it or maybe a motorcycle carrier ? it also holds our BBQ that fits right into it.

I found a Tail-Gator BBQ that mounts into the hitch receptacle on our TT on Craigslist, pretty old but in mint condition (cover mint too). Has a table and Umbrella with it and when it's not a BBQ it has extra parts to make it a bicycle rack for two bikes, best $100 I spent.

I have modified the bumper mount well actually the square tube for the mount
We cut off the posts that the RVQ mounted on and then made a table top bracket with a piece of larger tubing that now slides over the original bumper mount tube
Added a removable leg and added a piece of wood to make a table top to set the Weber on
Handy as it is right by the rear door so going in and out we have a surface to set things on. I have a 10 foot quick connect hose so I can setup the Weber away from the trailer a bit further but have not had smoke issues so far

Yes I did. I removed the pressure regulator and got the fittings to plug directly in to the LP port on the trailer. Then I attached a piece of plywood to the bracket arms using tie wraps so the weber could sit on it.

Used it a few times then ditched it when I got fed up of smoke getting in to open windows and smelled up the interior.

Do yourself a favour, ditch the bumper mount, get a 10' lap quick connect hose, and the Weber stand. I have the 1200 set up as described and love the heck out of it.
