Load center wiring
Here's my question: If one were to disconnect the negative cable from the battery to the load center (fuses, breakers, etc) AT THE LOAD CENTER, shouldn't one have no power to all the 12v devices? ...

A ground wire from the shore power cable into the 120 volt load center should be attached to the frame and to the ground wire to the receptacles.
When using batteries and disconnect the negative cable from the battery, there is no path to power 12 volt devices.
