On my 2500hd the exhaust pipe does indeed run below the pan, but it appears to have enough clearance to work it off, but I know looks can be deceiving.
Anybody here ever done this to a similar model year truck to give advice?

Just did it 3 months ago in my 2017, plenty of room. It is a 45,000 mile service transmission. A complete flush is about 12.5 quarts. A pan drop and fill is about 6.
I did a pan drop, filter and fill and drove it 500 miles, drained it from the drain plug and filled it. It is nice and clean.
Next I will disconnect a cooler line and do fluid transfer. I am at 33,000 miles.
