Thinking about becoming a full time TC'er, again...

It's been a very long time since I've been here. I had a Outfitter Apex 8 for a few years and a Chev 2500 CC SB truck, with the wife and I and 2 growing kids the camper was a little small and a few years ago I went to a 36' 5th wheel toy hauler.
I still had the Outfitter and we used it several times in the winters on ski trips, it worked quite well but again was small with very little storage space for gear. A year ago I upgraded my truck to a 2015 F350 CC long box DRW so I sold the Outfitter a few months back and we intended to get a older (mid - late 90's) TC with a bit more space to use in the winter for skiing and using the 5ver in the summer.
Now here's the whole point of my post..
We use the 5ver 30-50 days in the spring / summer months, pretty much always off grid in the back country, usually 3-5 hours away from home and always having to drive at least an hour of that on some pretty rough and beat up forestry roads and then after that have to worry about pulling into a spot with the big beast of a trailer. With all the miles I put on with the 5ver, dealing with all the downfalls of towing a big beast we are thinking on going back to a truck camper full time, get a small cargo trailer to bring the bikes and selling the toy hauler.
If we do this it would need to be a larger camper with slides, good storage and enough room for 4 people to sit and sleep comfortably.
One camper I am interested in is a Eagle Cap 995. I like the construction of the EC campers and seem to be a 4 season unit with nice features and good storage space.
There is a used one close to me, a 2008. I would like to be able to add the new fold down bunk in the slide that EC is now putting in the slide above the dinette in some of their units as a option.
Is it possible to do this and has anyone done this?
Also would like to hear some thoughts and comments about this model, and if people who own them are happy with it.
