There was enough cheese in 2 layers to clog an artery. What may have happened is it wasn't low fat mozzarella so it melted away more when cooked. Only a theory though.

I've done that for the pizza urge before too. Buy ciabatta bread, Put your ingredients on that and bake. The burrito shells or flour tortillas are basically like any flat bread which pizza crust is and works good. Tortillas aren't Mexican tasting out of the bag, they're just flat plain bread waiting to be spiced and prepared whatever way you want. You do whatever you have to do, we're talking survival here...
W e used Dave's Killer bread for hamburger buns today but Mexican Torta bread works great as a durable hamburger bun.
