Okay, you have polybutelene pipe which is a different material than pex.
You'll need a sharkbite adapter to go from the older gray pipe to pex to tbe 1/2" mpt to connect to your water heater.
Specifically a 1/2" Polybutylene to Pex adapter. Its a push and done part, costs more than the clamp band variety, but it will successfully adapter from your old pipe to the modern stuff. - FreepExplorer

I love the sharkbite fittings and will opt for that first every time. Sure it's a little pricey but well worth it to me. I keep a little bit of pex, a cutter and a few extra fittings in the basement, just in case. - JoeChiOhkiExplorer II

Ours and most use a swivel connection that threads onto water tank. Ive seen pictures of fittings without swivel that were threaded onto tank and then lines crimped on-
hopefully yours isn't one of those- a bit more involved.
I prefer those kind of Pex clamps, they're about 10,000 times easier to remove than the copper band type. A pair of end cutters and a good twist will usually break the clamp band, then its just a matter of prying it loose with some needle nose pliers and a flat head screw driver.
