Even if there was a wiring diagram it would be of little use. However understanding how RV electrical systems work is of great use. Concentrate your efforts there.

good luck finings somthing like that, I personaly thing that they refuse to release them so if some one finds somthing that is not "as per" the drawing they don't have grounds for a law suite if somthing goes wrong.
general additions arn't that bad to do, you just have to do some investigating and see where you can run wires and such.. solar is pretty strait forward, if you don't want to put the wires through the roof then bring them down the fridge vent, as for conecting, solar conects to the battery its self so thats your run, if you are adding solar then you should probably get a good shunt that will atach to the negitive post of your battery then all your negitive wires will atach to the other side of that.
for running aditional 12V depending on the power center you have there might be empty fuse spots and corasponding wires on the back, so you might have to pull it out and look, while you have it out look behind it and see if there is a negitive bus bar. if so for any new circuits the positives will go to the power center and the negitives to the bus bar
