So unfortunately, I have a bent scissor jack on my 15 Springdale 270LE. I believe they're 2500lb rated. Question is, can I toss a 5000+ rated jack on there without issue or do I need to match it?

I made a set of drive on airbags. Just drive on em, inflate to level side to side. Work really well. No bounce to em. And at most they have maybe 10-15psi I know this isnt really what you're looking to do though.

sorry I meant, old trailer had old style hitch. New trailer has the Recurve. So i can't say new trailer would tow with old style. Still the trailer from GM Trucks
