Re: Weight Watcher RecipesI had some of the sauce (corn, beans and salsa) leftover from the Sante Fe Porkchops so tonight we had salad with the sauce and slice chicken breast on top. For a dressing, I made a cilantro cream sauce. Served warm tortillas on the side. It was pretty good. Cilantro Cream Sauce 1 jalapeno pepper 1 bunch of cilantro 1 small garlic clove Juice of 1 lime 1 (8 oz) container of plain yogurt or sour cream 1/2 tspn salt, or to taste Split the jalapeno and remove stem and seeds. Coarsley chop the cilantro. Smash the garlic. Place in a food processor or blender with the lime juice and puree. With the machine running, add the yogurt and blend until smooth. Taste for seasoning and add salt and/or additional lime juice if needed. Makes about 1 1/2 cups.Re: Weight Watcher RecipesMade this last night and it was delicious. Sorry I don't have exact measurements but I dont' think you really need them. Sante Fe Pork Chops 4 boneless pork chops, thick cut 1 pkg of taco seasoning - I used about 1/2 pkg 1 can of black beans - drained frozen corn kernels - I used half a 16 oz bag Salsa - I used about 1 1/2 cups. Use mild, medium or hot - it's your choice. Rub pork chops with taco seasoning and cook in fry pan until done. Add beans, corn and salsa and heat throughly. Your done!!! It's long and slips up over my arm in case I have to reach in to poisen ivy to clean up after my dog. Here is a good recipe that everyone will enjoy. In a food processor, mince one clove of garlic. Add one can of black beans, drained. Blend well until paste-like. Add one tablespoon of salsa and one tablespoon of low fat sour cream (optional) and mix. Let set for at least 30 minutes before serving. Serve with baked tortilla chips.Re: Weight Watcher RecipesApple Pie Muffins Take one can of light no sugar added apple pie filling and mash it in a bowl. Its ok to leave chunks - just not whole apple slices. Add 1/2 cup of no sugar added natural applesauce, 3 egg whites and 2 tsp of McCormicks apple pie spice. Mix all of that together, then add one box of spice cake mix. Mix everything until well blended. Fill each muffin cup almost to the top. Bake at 350 for 25-30 minutes - make sure they don't burn. They work out to 0 pts a cookie. I got the recipe from a Prevention magazine. Chocolate Bliss Bites ½ c unsweetened cocoa powder 3 lg egg whites Pinch of Salt 1/8 tsp cream of tartar ½ c sugar, divided 1 Tbsp confectioners’ sugar 1 tsp vanilla extract 1. Preheat oven to 300F. Line 2 baking sheets with foil. 2. In a small bowl, sift together cocoa, salt and ¼ cup of the sugar. 3. In large bowl, with electric mixer at medium-low speed, beat egg whites and cream of tartar until soft peaks form. Beat in remain ¼ cup sugar, ½ teaspoon at a time, unti meringue is glossy and stiff peaks form. Fold in cocoa mixture and vanilla extract. 4. Drop by rounded teaspoonfuls about 1” apart onto prepared baking sheets. Bake 25 minutes for soft chewy cookies or 40 minutes for crisp ones. Dust cooled cookies with confectioners’ sugar. Makes 24 cookies, 0 pts each cookie Per cookie: 25 cal, 1 g pro, 6 g card, 0 g fat, 0 g sat fat, 0 mg chol, 0.5 g fiber, 13 mg sodium
