I would not recommend CA-1 (Cal-1), it's a tourist road not a travel road.
US101 avoids going over a couple grades that I-5 has to. But it does so, through Oregon and Washington by being very twisty, again more of a tourist road.
November is -not- usually nasty going over the passes on I-5. If it happens to get nasty, wait a day or two and roads will be better.
Where are you staying in Shelton, not a lot of RV "parks" there, plus the economy there has gone very bad since the mill closed earlier this year (yes, I know Shelton well)
